Smoky Chorizo and Halloumi Breakfast Jaffles: The Ultimate Campfire Warm-up

There is a specific kind of magic that happens when you wake up in the Australian bush on a crisp July morning. The air is sharp, the mist is hanging low over the river, and the first task of the day is always the same: get the fire going. Once those coals are glowing and the kettle is whistling, there is no better way to fuel up for a day of touring than with a jaffle iron and a bit of smoky chorizo.

In the world of camp cooking, the jaffle iron is a humble hero. It’s the ultimate "set and forget" tool that turns simple ingredients into a molten, golden-brown parcel of goodness. While the classic baked bean or ham-and-cheese jaffle has its place, we’re stepping things up a notch today. This recipe for Smoky Chorizo and Halloumi Breakfast Jaffles is designed for those who want a bit of punch in their morning meal—a Mediterranean twist that’s perfectly suited to the rugged conditions of an Aussie campsite.

What you need

Ingredients (Serves 4)

  • 8 slices of thick-cut white bread (sourdough works great if you’ve got it)
  • 2 large chorizo sausages, sliced into 5mm rounds
  • 200g halloumi cheese, sliced into 5mm slabs
  • 1 large red capsicum, thinly sliced
  • 1 small bunch of fresh baby spinach leaves
  • 4 large eggs (optional, but highly recommended for a full breakfast experience)
  • Butter (plenty of it, salted is best)
  • A splash of olive oil
  • A pinch of dried oregano or chilli flakes if you like a bit of heat

Gear

  • 2 double or single cast-iron jaffle irons (long-handled is best)
  • Long-handled campfire tongs
  • Heat-resistant gloves
  • A small cast-iron skillet or hotplate for pre-frying the chorizo
  • A well-established campfire with a solid bed of hot coals

How to make it

  • Get the coals ready: Your jaffle iron needs steady, even heat. Avoid the high flames; you want a deep bed of white-hot coals. Move a portion of the coals to the edge of the fire pit to create your "cooking zone."
  • Pre-fry the chorizo: Chorizo has a high fat content that needs to be rendered out to get that smoky flavor. Heat a splash of olive oil in your skillet over the fire and fry the chorizo slices for 2–3 minutes per side until they’re slightly crisp and have released their vibrant orange oil. Set them aside on a paper towel.
  • Lightly char the capsicum: Using the same skillet (and that delicious chorizo oil), quickly sauté your red capsicum strips until they’ve softened and picked up a bit of char.
  • Prepare the bread: Lay out your bread slices and butter one side of each piece liberally. This is the side that will touch the cast iron, ensuring that iconic golden-brown crust.
  • Build the base: Place one slice of bread, buttered side down, into the jaffle iron. Layer on a few spinach leaves, followed by 3–4 slices of the fried chorizo and a slab of halloumi. Top with a few strips of charred capsicum and a sprinkle of oregano.
  • Add the egg (optional): If you're feeling brave, you can crack an egg directly into the center of the fillings before closing the lid. It’s a bit of a balancing act, but the result is a perfectly poached egg inside your jaffle.
  • Seal and cook: Place the second slice of bread on top, buttered side up, and close the jaffle iron. Lock the latch and trim off any excess bread sticking out the sides with your tongs (this prevents the edges from burning).
  • Into the coals: Place the jaffle iron directly onto the bed of coals. Cook for 3–4 minutes per side. Resist the urge to peek too often, but keep an eye on the edges.
  • The final check: Open the iron carefully. You’re looking for a deep, even golden-brown colour and a crisp texture. If the halloumi is starting to ooze out and sizzle against the iron, you’re done.

10. Serve: Let them rest for 60 seconds before biting in—the molten halloumi and chorizo oil inside can be incredibly hot. Serve with a fresh camp coffee.

Camp tips

  • Season your irons: If you’re using new cast-iron jaffle irons, make sure you season them properly at home before your trip. This prevents the bread from sticking and builds up that non-stick patina over time.
  • Prep ahead: You can slice your chorizo, halloumi, and capsicum at home and store them in your Engel or 12V fridge in a single container. It makes the morning mobilisation much faster.
  • The "Flip Rule": Always flip your jaffle iron every 2 minutes. Coals can have hot spots, and regular flipping ensures an even cook and prevents one side from turning to carbon while the other is still white.
  • Leftovers: If you have leftover chorizo oil in the skillet, don't throw it away! It’s liquid gold for frying up some potatoes for dinner or adding flavour to a damper later in the day.

Closer + cross-sell

A great day on the tracks starts with a solid breakfast, and keeping your ingredients fresh in the middle of the NT or the WA coast is the first step. To ensure your halloumi stays firm and your chorizo remains at the optimal temp, a reliable 12V power setup for your fridge is essential.
