What you need

Ingredients (Serves 4)

  • 4 large brushed potatoes (approx. 800g), diced into small 1cm cubes for fast cooking.
  • 250g rindless bacon, roughly diced.
  • 4 large free-range eggs.
  • 1 cup shredded tasty cheese (or a cheddar/mozzarella mix).
  • 2 spring onions, finely sliced.
  • 1 tsp smoked paprika.
  • Sea salt and cracked black pepper to taste.
  • Olive oil for drizzling.
  • Optional: A splash of your favourite hot sauce or a dollop of sour cream for serving.

  • Heavy-duty aluminium foil (don’t skimp here—cheap foil will tear when you’re moving it in the coals).
  • Long-handled tongs or a small fire shovel.
  • A solid bed of hot coals (avoid placing directly on high flames, or you’ll end up with charcoal potatoes).
  • A sharp knife and chopping board.

How to make it

  1. Prep the coals: Before you start chopping, ensure your fire has a good bed of glowing red coals. You want steady, even heat. If the fire is still roaring with flames, give it another 15 minutes to die down.
  2. Prepare the foil: Cut four large squares of heavy-duty foil (about 40cm each). If your foil feels thin, double it up to create a sturdier base.
  3. Toss the base: In a bowl (or directly on the foil squares), divide the diced potatoes and bacon. Drizzle with a little olive oil and sprinkle with the smoked paprika, salt, and pepper. Toss gently to coat everything evenly.
  4. Create a nest: Spread the potato and bacon mixture in the centre of each foil square, leaving a small "well" or nest in the middle for the egg later.
  5. Seal the parcels: Fold the edges of the foil up and over the mixture, crimping the edges tightly to create a sealed pouch. Leave a little bit of air space inside so the steam can circulate.
  6. Into the fire: Using your tongs, place the parcels directly onto the hot coals. Do not bury them completely; just nestle them in.
  7. The first cook: Cook the potato and bacon for about 20–25 minutes. Carefully remove one parcel and check if the potatoes are tender and the bacon is starting to crisp.
  8. Add the eggs: Open the parcels carefully (watch out for the steam!). Crack one egg into the "well" you created in the centre. Sprinkle a generous handful of cheese over the top.
  9. The final melt: Close the foil back up (loosely this time so the cheese doesn't stick to the top) and return to the coals for another 5–8 minutes. You’re looking for the egg white to be set but the yolk to remain slightly runny.
  10. Garnish and serve: Remove from the heat, sprinkle with fresh spring onions, and serve directly in the foil. No plates, no washing up—just pure camp bliss.

Camp tips

  • Par-boil at home: If you’re worried about cooking time or have hungry kids who can't wait, dice and par-boil your potatoes at home for 5 minutes before you leave. They’ll cook twice as fast in the coals.
  • The "Cold Spot" check: If one side of your fire is hotter than the other, rotate the parcels halfway through to ensure the potatoes cook evenly.
  • Add some greens: Toss in some diced capsicum or a handful of baby spinach when you add the egg for a bit of extra colour and nutrition.
  • Leftover hack: If you have leftover roast veg from the night before (pumpkin or sweet potato), throw them in! They work beautifully as a base instead of fresh potatoes.
