There is a unique kind of magic in wrapping up a cold winter day of travelling with a warm, golden-brown sausage roll in hand. Whether you are parked on a red-dirt track in the Flinders Ranges or camping along the coastal fringes of Western Australia, a freshly baked snack is the ultimate comfort food. But traditionally, baking pastries on the road meant firing up a temperamental gas caravan oven or tending to a hot campfire coal bed—neither of which is quick or easy on a wet afternoon.
Enter the modern caravan air fryer. With high-powered off-grid lithium battery systems and robust inverters becoming the standard in modern touring setups, the air fryer has quickly become the ultimate caravan kitchen accessory. It cooks faster, uses less space, and achieves a level of crispy, flaky perfection that easily rivals any country bakery.
What You Need
Ingredients (Makes 8 Rolls)
- 500g premium beef sausage mince (or quality beef snags with skins removed)
- 2 sheets ready-rolled puff pastry (thawed, kept cold in your 12V fridge)
- 1 small brown onion, very finely diced
- 1 garlic clove, minced
- 1 tbsp Vegemite (our secret Aussie umami booster)
- 1 tbsp tomato sauce
- 1 tsp dried mixed herbs (thyme and rosemary work beautifully)
- 1 egg, lightly beaten (for egg wash)
- 1 tbsp sesame seeds (for dusting)
- Pinch of salt and cracked black pepper
Gear
- Caravan air fryer (basket or drawer style)
- Baking paper (cut to fit your air fryer basket)
- Small mixing bowl
- Pastry brush
- Sharp knife and cutting board
How to Make It
- Prep the filling: In a mixing bowl, combine the beef sausage mince, finely diced brown onion, minced garlic, dried herbs, salt, and pepper. Add the secret ingredient—one tablespoon of Vegemite—and the tomato sauce. Mix thoroughly with your hands until the ingredients are completely integrated.
- Roll out the pastry: Lay your thawed sheets of puff pastry on a clean cutting board. Cut each sheet in half vertically, creating four long rectangles.
- Assemble the rolls: Divide the seasoned beef mixture into four equal portions. Roll each portion into a long sausage shape and place it down the center of each pastry rectangle.
- Seal and cut: Brush one edge of the pastry with a small amount of the beaten egg wash. Fold the pastry over the meat filling, overlapping slightly to seal. Press the seam down firmly. Using a sharp knife, cut each roll into two or three pieces depending on your air fryer basket size. Brush the tops of the rolls with the remaining egg wash and sprinkle with sesame seeds.
- Prepare the air fryer: Line your air fryer basket with a sheet of baking paper (this prevents the pastry from sticking and catches any dripping fats, making cleanup incredibly easy). Place the sausage rolls in the basket, leaving at least one centimetre of space between each roll to ensure the hot air can circulate and puff the pastry.
- Bake to perfection: Set your caravan air fryer to 180°C and cook for 15 to 18 minutes. At about the 12-minute mark, check on them—the pastry should be deeply golden, puffed, and flaky, and the beef filling should be completely cooked through with juices running clear.
- Smoko time: Carefully remove the sausage rolls from the basket and let them cool on a wire rack or cutting board for 5 minutes before serving. Enjoy hot with a healthy dollop of classic tomato sauce.
Caravan Kitchen Pro-Tips
- Defrosting Pastry: Never let puff pastry sit in the sun or it will turn into a sticky, unworkable mess. Thaw it slowly in your 12V fridge or insulated esky for an hour before baking. Cold pastry puffs significantly better than warm pastry.
- Manage Your Inverter Draw: A typical caravan air fryer draws between 1200W and 1800W. Ensure your caravan's inverter and lithium battery bank are rated to handle this continuous load, and consider baking during high-noon solar peak to offset the battery draw.
- Pre-Prep at Home: To make camp cooking even easier, roll and assemble the sausage rolls at home, wrap them in baking paper, and store them in your freezer. On travel days, let them defrost in your 12V caravan fridge while driving, and they will be ready to air-fry the second you park up.
